Are you sure? The stock coil covers over a few inches of the shock, just like aftermarket coilovers.

I took the stock shocks, and added adjustable height to them, then the smaller 2.5" diameter QA springs.

Yes they are definitely springs and struts (and not shocks). Coilovers have the ability to adjust the spring and shock. There's a level of semantics, but struts are more of a complete assembly (coming with an integrated spring perch and concessions for mounting on the vehicle specific knuckles, ebrake mounting tabs, brake line mounting tabs etc.) whereas shocks are just the tube (much like you made) and can be independent of the spring (but don't have to be).
